How to cook Edikang ikong soup

Before i proceed to the post of the day, i would like to share this wonderful message from God to you all. because he is the Author and the finisher of Our Faith and with Him, all things are possible.
The Word of God admonish us to ”Guard Our Heart”. The book of proverbs 4:23 reads” keep thy heart with all diligence; for out of it are the issue of life” Everything God has planned concerning our life and what we would become is in our heart and the things we allow into our heart, has the potential to build or destroy us. so therefore, it is very important, for us to carefully and conscientiously guard what comes into our heart, by studying the word of God diligently.God bless you, as you become the dower of the word and not only hearers, Amen.

Now lets get down to the business of the day. which is
Edikang Ikong soup is the most popular soup that is being prepared in the South-South region of Nigerian, specifically Cross River State and Akwa Abasi Ibom State.this particular soup is highly nutritious, in terms of vitamins,minerals and protein.
It’s easy to prepare, but precautions must be taken in order to get the maximum result.

(a) Water [500ml] (b) Vegetable leaf [pumpkin] (c) Water leaf (d) Pepper [grinned] (e) Salt (f) Seasoning cube (g) Beef (h) Dry fish [your choice of fish] (i) Cray fish [grinned] (j) Skin [kpomo] (k) Onion [1 bulb] (l) Palm oil (m) Stock fish (n) Periwinkle [optional] (o) Snail
Step 1. Plug and Slice the Vegetable leaf and the Water leaf
Step 2. Remove the Intestines and gills from the fish, cut them into smaller pieces with the stock fish.
Step 3. Wash your Beef, cut them to your desired quantity.
Step 4. Clean the back and inside of the kpomo(skin) very well.
Step 5. Cut both the head and tail of the shrimp,and then wash it.
Step 6. Break off the shell of the snail and wash it properly with lime orange,salt as well as with alum three(3) to five(5) times.
Step 7. Cut the periwinkle (both the cap and tail).
Step 8. Slice the bulb of onion.
Step 9. After preparing all the ingredients such as the fish,beef,snail,kpomo,periwinkle,shrimps and stock fish, add 2-3 tablespoon of pepper,1-2 teaspoon of salt, some seasoning cube,and half of the onion you sliced,use a liter (1000ml) of water to steam them for about 5minutes or so for it to be well steamed.
Step 10. place a clean pot on the cooker, turn the sliced water leaf into it, cover to heat for 2-3minutes,then pour the well steamed ingredients inside the pot of water leaf stir and cover it for 5minutes.
Step 11.Go back and open the pot add the remaining sliced onion along side the vegetable leaf allow to steam for 2minutes.
Step 12. get a liter of oil and pour it into the pot on the cooker, stir all the ingredients together for extra 3minutes.

* The Quantity the of Pumpkin leaf should be much, while that of the Water leaf should be 1/4 of the pumpkin.
* The only water that you are permitted to use is the one you use in steaming the fish,kpomo,beef,stock fish,e.t.c
* The soup must be a little bit oily(as in to make it look presentable because it consumes much oil and at the same time be mindful of the oil.
* At most a liter of oil is required ,but it can be more or less than that,depending on the quantity of soup you are preparing.
* Cook the soup to be half cooked and not well cooked.
* If the soup is too watering it turns into another soup
* When serving use Garri (eba), Fufu (akpu) and Semovita so as to enjoy the meal.
