Jellof Rice as the name implies is a combination of ingredients such as rice, vegetable oil, tin tomatoe, nutmeg, e.t.c.
It is a delicacy that is being prepared in occasions such as, birthday parties, marriage ceremony, festival periods and even during traditional events.
RECIPES OF JELLOF RICE
(i) Water (ii) Rice (iii) Tin-tomatoes (iv) Seasoning cube (Solid or Liquid) (v) Salt (vi) onion (vii) Nutmeg (viii) Thyme (ix) Curry (x) Vegetable oil (xi) Blended fresh pepper (xii) Meat or Fish.
Step 1. Prepare the meat or the fish, cut them into aller piece, wash them very well before steaming it with salt, pepper, half sliced onion, a little grated nutmeg and a cup of water for 5minutes.
Step 2. After steaming the meat or the fish, get a clean fry pan, place it on the cooker, add vegetable oil in the fry pan, when the oil is hot you can start frying either the meat or the fish depending on your choice, after frying it put it inside a clean cooler and keep it aside.
Step 3. Pa-boil the rice for 5minutes for it to be half cooked.
Step 4. After pa-boiling the rice place your second pot on the cooker, turn the vegetable oil into the pot for it to be hot, immediately add the remaining sliced onion, tin-tomatoe, blended pepper, thyme, grated nutmeg, curry powder, salt, seasoning cube and stir them very well.
Step 5. After that you can add some cups of water(2-3) and cover it to steam for 2minutes.
Step 6. Open the pot and add the half cooked rice bit by bit and stir them properly for the ingrdients to be well mixed, then cover the pot.
Step 7. Chect to see if all the ingredients are well mixed together, and if there is still water in the rice so as for it to be well cooked, if no water, add some water to your taste and any other ingredients you feel is not sufficient for extra 5minutes.
Step 8. You can now put it down and serve with your fried meat or fish.
