CURRY SAUCE

Today’s post is on “How To Cook Curry Sauce”

RECIPES
i. 2 tablespoons peanut oil
ii. 1 tablespoon margarine
iii. 1 large onion, chopped
iv. 1 tablespoon minced
fresh ginger root
v. 2 tablespoons minced
garlic
vi. 1 teaspoon ground
cinnamon
vii. 1 teaspoon ground black
pepper
viii. 2 tablespoons ground
coriander
ix. 2 tablespoons ground
cumin
x. 1/4 teaspoon ground
turmeric
xi. 1 teaspoon cayenne
pepper
xii. 2 tomatoes
xiii. 2 serrano chile peppers,
seeded
xiv. 1/2 cup fresh cilantro
xv. 1/2 cup yogurt, whisked
until smooth
xvi. 3 cups of water

PROCEDURES
1. Heat oil and margarine in a small
skillet or wok over medium high
heat. Add onion and stir for 10-15minutes until its
very brown.
2. Add ginger and garlic to the onion
and stir for 2
minutes. Process the onion, ginger, and garlic mixture in food processor
until smooth. Do not rinse food
processor.
3. Add onion mixture in a large
saucepan. Stir in the cinnamon,
black pepper, coriander, cumin,
turmeric and cayenne pepper, cook on a low heat until
mixture is thick and has the
consistency of a paste.
4. Turn the tomatoes, chille peppers
and cilantro in food processor
until smooth. Add the to onion
mixture and stir very well on low
heat, Add little
yogurt to it,
stirring constantly to avoid
curdling.
5. Blend the whole mixture in food
processor for a very
smooth sauce.
Use the same saucepan, add water and
increase the heat,
allow sauce to steam, cover the saucepan and boil for 3 to 5
minutes. Reduce heat and
simmer until desired consistency
is reached.
6. To serve with Beef, cook the
beef in a separate pan for 5-10minutes before serving.
You can serve with Rice, Bread, Vegetables or anything of your choice.
